Ingredients

  • ½ cup olive oil
  • 1 cup sugar 
  • 2 eggs 
  • 1 tsp vanilla 
  • 1 ½ cups flour 
  • 1 ½ tsp baking power 
  • ¼ tsp salt 
  • 1 cup buttermilk 
  • 3-4 pears, cored and sliced 
  • 1 cup cranberries 
  • ½ cup walnuts, chopped 

Topping

  • 2 tbsp sugar
  • 1 tsp cinnamon
  • 1 teaspoon pure vanilla extract
  • ½ - 1 tablespoon coconut oil 

Instructions

  1. Pre-heat oven to 350 degrees.
  2. Line the Calphalon Premier™ Countertop Safe 9 inch round pan with parchment paper. Oil and flour the sides of the pan.
  3. In a stand mixer bowl, add oil and sugar. Mix in eggs. Add vanilla. Mix. Add dry ingredients and buttermilk and blend.
  4. Pour into the pan. Arrange sliced pears on top. Add cranberries on top of the pears. Sprinkle on walnuts.
  5. Mix the ¼ cup sugar and cinnamon. Sprinkle on top of the cake.
  6. Bake for 1 hour to 1 hour and 15 minutes. Cool and serve on a cake platter.
