INGREDIENTS

Rolls:

  • 1 cup warm milk
  • 1 tbsp yeast
  • 2 eggs
  • 2/3 cup butter, melted
  • 1 tsp salt
  • 1/2 cup sugar
  • 2 cups all-purpose flour
  • 2 cups bread flour
  • 1/2 cup heavy cream (for brushing on rolls)

Filling:

  • 1/2 cup butter, softened or melted
  • 3/4 cup granulated sugar
  • 1 tbsp orange zest
  • 1 tsp cinnamon

Glaze:

  • 4 oz. cream cheese, softened
  • 1 1/2 cups powdered sugar
  • 1 tbsp orange juice
  • 1/4 tsp chopped fresh rosemary (optional)

INSTRUCTIONS

Rolls:

  1. Warm milk in the microwave, then pour into a stand mixer. Sprinkle yeast on top and let stand for 10 minutes. Add eggs, butter, salt, sugar, and both flours. Knead into a dough with a hook attachment for about 5 minutes. Cover the dough with a plastic wrap and let rise for 1 hour. Place bowl in the refrigerator overnight.
  2. The next day, divide the dough in half. Sprinkle the counter with flour. Roll one half of the dough into a rectangle. Spread half of softened or melted butter on top.
  3. In a small bowl, combine sugar, orange zest, and cinnamon and mix. Sprinkle half of the orange-sugar filling evenly on top of the dough. Roll up the dough on the short side and use a sharp knife to cut the log into 7 to 8 slices. Place each roll in a cast-iron pan.
  4. Roll out the second piece of dough and repeat the process. Add the second set of rolls to the cast-iron pan. Cover with a kitchen towel and let them rise until the rolls are twice their size, about 1 hour.
  5. Preheat oven to 400 degrees F. Brush rolls with heavy cream. Bake for 20 to 25 minutes or until golden brown.
  6. As rolls bake, make the glaze. In a bowl, combine cream cheese, powdered sugar, orange juice, and rosemary. Beat with a hand mixer until smooth. Add more orange juice if a thinner consistency is wanted.
  7. Remove rolls from the oven and spoon on the cream cheese glaze.
