Green Pea and Chickpea Falafel Recipe

A meal full of heart, health, veggies and protein, oh my! This green pea and chickpea falafel recipe can be enjoyed over a salad, a bowl of rice, or just by itself.

Ingredients:

  • 1 Can of Chickpeas, Drained and Rinsed
  • 3/4 Cup of Frozen Peas, Shelled
  • 1/2 Medium Red Onion, Chopped
  • 2 Garlic Cloves
  • 1 Tablespoon Lime Juice
  • 1/4 Cup Fresh Parsley Leaves
  • 1 1/2 Teaspoons Ground Cumin
  • 1/2 Teaspoon Fresh Ground Black Pepper
  • 1 Teaspoon Baking Soda
  • ¼ Cup of All-Purpose Flour
  • 2 Tablespoons of Grape seed Oil for Frying
  • Salt and Red Pepper Flakes
  • Garnish:
    • Tzatziki sauce
    • 2 Cups of Fresh Spinach

Preparation:

  1. Combine all ingredients (except the oil) in a food processor. Pulse until the mixture is well combined, but not puréed. Adjust seasoning as necessary.
  2. Heat about one tablespoon of the oil in the Calphalon Premier™ Stainless Steel 10” Fry Pan over medium heat.
  3. Meanwhile, form the mixture into small patties. Prepare a paper towel lined baking sheet and set aside.
  4. Fry the patties in batches without crowding the pan. Cook, turning occasionally, until golden-brown, about 5 minutes.
  5. Transfer to the prepared baking sheet to cool. Repeat with the remaining patties, and then serve with Tzatziki sauce over spinach.
