Gourmet Burgers with Brie Cheese, Bourbon Glaze, and Truffle Aioli Recipe

A delicious gourmet burger recipe perfect for a backyard barbecue, our Bourbon Glazed Brie Burgers with Truffle Aioli are divine and full of flavor.

  • 1 lb ground chuck beef (80/20)
  • garlic powder
  • onion powder
  • salt to taste
  • black pepper to taste

Truffle Mayonnaise

  • ½ cup mayonnaise
  • 1 tsp truffle oil
  • 1 tsp black truffle spread

Bourbon Glaze

  • 2 tbsp  ketchup
  • 1 tsp Dijon mustard
  • 3 tbsp soy sauce
  • 2 tbsp light brown sugar packed
  • 1 tbsp honey
  • 1 clove garlic, minced
  • 1 tsp apple cider vinegar
  • 3 tbsp bourbon


  • 4 brioche buns, split in half
  • Arugula
  • 1 Shallot, sliced
  • 8 slices Brie cheese
  • 4 slices  bacon, cut in half and fried


Truffle Mayonnaise

  1. Mix all ingredients and refrigerate until ready to use.


  1. Add all ingredients to a small pot over medium heat. Cook until the mixture start to bubble. Remove from heat and set aside.


  1. Divide ground beef into 4 portions. Shape each into patties. Season each patty on both sides with salt, pepper, garlic powder, and onion powder. Heat grill pan over medium heat. When hot, add each burger to the pan. Cook on one side for 5 minutes, then flip over. This is for a medium burger. For medium rare, cook for 4 minutes. For medium well, cook for 6 minutes
  2. Brush bourbon glaze on the burger. Cook the second side for 5 minutes as well. Flip again and brush the glaze on the other side.
  3. Add 2 slices of Brie to each of the burgers. Cover with a lid for 30 seconds until the cheese is melted. Remove each patty from the pan.


  1. Divide each bun. Toast slightly. Place a burger on top on the bottom buns. Add 2 halves of fried bacon to the burgers. Top with sliced shallots and arugula. Spread truffle Mayo on the bottom side of each top bun. Add top buns to burgers and serve.
