Ingredient Description:
1 c. onion, chopped
1 Tbsp. bacon drippings
3 c. cooked black eye peas
1 c. cooked ham or 4 slices cooked bacon, chopped
1/4 tsp. cayenne pepper
3 c. white rice, cooked
salt to taste
In a large sauté pan, cook chopped onion in bacon drippings until tender.
Stir in black eye peas, ham or bacon, and cayenne pepper.
Simmer for 10 minutes over medium-low heat.
Stir in rice and add salt to taste. Serve hot, with cornbread or collard greens.
