Thumbprint Cookies

Ingredient Description:
1 c. unsalted butter, softened
3/4 c. light brown sugar
2 eggs
2 1/2 tsp. vanilla
2 1/2 c. all-purpose flour
1 1/2 c. pecans, finely chopped
1/2 c. raspberry jam

  1. Preheat oven to 375°F/190°C. 
  2. Thoroughly mix the butter, sugar, eggs and vanilla together. 
  3. Sift flour into mixture and combine. 
  4. Shape dough into 1-in. balls and roll in nuts to lightly coat.  Place on a cookie sheet at least 1 1/2 in. apart. 
  5. Bake for 10 minutes and remove from the oven. 
  6. Using your thumb or a teaspoon, make a depression in each cookie and fill with 1 tsp. of jam. 
  7. Return cookies to oven and bake an additional 10 minutes or until lightly browned.
