Spiked Mayonnaise

Ingredient Description:
2 egg yolks
2 garlic cloves, pureed
1 Tbsp. white wine vinegar
1/8 tsp. dry mustard
1 tsp. lemon juice 
3 oz. olive oil
2 oz. vegetable oil
2 Tbsp. fresh cilantro, roughly chopped
1 jalapeno pepper, finely chopped
1 1/2 tsp. hot sauce (optional)
salt and freshly ground black pepper, to taste

  1. Combine yolks, garlic, vinegar, mustard and lemon juice in a bowl and whisk until foamy. In a steady stream, whisk in oils.
  2. Stir in cilantro, jalapeno, hot sauce and seasoning. Cover and chill until ready to use.
  3. Superb served as a small dollop on top of our Dixie Land Crab Cakes or on the side for dipping.
