In a medium bowl, combine all of the mango mint salsa ingredients and toss well to combine.
Preheat a grill pan over medium heat until the rim of the pan is hot to the touch. Brush the pan generously with olive oil and allow it to heat for another minute. Grill the chops in batches, two minutes per side for medium.
