Who doesn't love the delicious combination of chocolate, marshmallow and graham crackers in S'mores? In fact, making S'mores is so popular in the U.S. that supermarkets often carry "the big three" ingredients in the same section during the summer month

S'mores Cookie Bars

Ingredient Description:
1 c. butter, softened
1 1/2 c. sugar
2 eggs
2 tsp. vanilla extract
2 2/3 c. all-purpose flour
1 1/2 c. graham cracker crumbs
2 tsp. baking powder
1/2 tsp. salt
2 8-oz. packages of Hershey's Mini Milk Chocolate Bars (or 10 Hershey's 1.55-oz. Milk Chocolate Bars)
6 c. miniature marshmallows

  1. Preheat the oven to 350°F/180°C.
  2. In a large bowl, cream butter and sugar until well blended.  Add eggs and vanilla; beat well.
  3. In a separate bowl, stir together flour, graham cracker crumbs, baking powder and salt; add to butter mixture, beating until well blended.
  4. Press half of dough in a prepared 9x13-in. pan.  Reserve remaining dough.  Bake 15 minutes.
  5. After removing from oven, arrange mini or large chocolate bars over baked layer, breaking as needed to fit.  Sprinkle with marshmallows; scatter bits of remaining dough over marshmallows, forming top layer.
  6. Bake 10 - 15 more minutes or until lightly browned. 
  7. Cool completely in pan on wire rack.  Cut into bars.
