Silver Dollar Pancakes

Ingredient Description:
2 c. all-purpose flour
2 Tbsp. baking powder
2 tsp. salt
1/4 c. sugar
2 c. milk
2 eggs
6 Tbsp. melted butter

  1. In a mixing bowl, sift together flour, baking powder, salt and sugar.
  2. In a separate bowl, combine milk, eggs and melted butter. 
  3. Make a well in the center of dry ingredients and pour in the egg mixture.  Mix until just combined.  
  4. Heat a nonstick griddle on medium heat for about 1 minute; when hot reduce heat to low.  
  5. Pour about 1/4 c. of batter for each pancake.  Cook for about 2 minutes or until the edges turn golden brown. 
  6. Turn over and cook for another 2 minutes.  Repeat process until all of batter is used. 
  7. Transfer pancakes to warm plates and serve with maple syrup or top with your favorite fruit and chopped nuts.
