Fresh Berries with Zabaglione

Ingredient Description:
6 egg yolks
1/2 c. sugar
1/3 c. Marsala wine
1/2 c. whipping cream, whipped to soft peaks
2 qts. fresh berries, rinsed

  1. Whisk egg yolks and sugar together in a 2-qt. chef's pan.  Place the pan on very low heat and continue to whisk until the liquid thickens.
  2. Slowly add the Marsala; continue whisking until it thickens, about 5 - 10 minutes.  Do not boil.
  3. Allow the custard to cool for approximately 20 minutes.
  4. Gently fold in the whipped cream.
  5. Chill until ready to top with fresh berries.
