2 Tbsp. garlic-infused olive oil
2 Tbsp. butter
4 medium baking potatoes, peeled and cut into 1/2-in. dice
1 Spanish or yellow onion cut into 1/4-in. dice
1/2 tsp. pepper
1 tsp. paprika
1/2 tsp. salt
assorted fresh herbs like parsley, basil, marjoram and chives
Preheat a 3-qt. sauté pan on medium-high heat until the rim of the pan is hot to the touch. Add the oil and butter allow to heat for an additional minute.
Add the potatoes, onion, pepper, paprika and salt and sauté until the potatoes reach a crisp, golden brown, about 15 - 20 minutes.
Garnish with lots of fresh chopped herbs.
