A great salad for a light summer meal. The toasted walnuts add a bit of crunchy texture.

Apple Goat Cheese Salad with Walnut Vinaigrette

Ingredient Description:
For the vinaigrette (makes 3/4 c.):
1/4 c. champagne vinegar
2 tsp. Dijon mustard
1/4 c. walnut oil
1/4 c. extra-virgin olive oil
salt and freshly ground pepper

For the salad:
5 c. baby greens, washed and dried
1/2 Granny Smith apple, sliced into thin crescents
4 slices fresh, plain goat cheese
1/4 c. walnuts, chopped and toasted

  1. In a medium bowl, combine the vinaigrette ingredients and whisk until fully combined and smooth.
  2. Add the greens and sliced apple to the bowl and toss gently. Divide evenly between two serving plates. 
  3. Place two slices of goat cheese on each plate.  Drizzle the vinaigrette over the salad and add salt and pepper to taste.
  4. Garnish with the toasted walnuts and serve.
