Instead of pecans, this recipe can be prepared with an assortment of nuts including almonds, pumpkin seeds and/or pistachios. For a unique gift, place the brittle in airtight tins found in craft stores.

Spicy Pecan Brittle

Ingredient Description:
1 c. sugar
1/2 c. light corn syrup
1/2 c. water
1/2 tsp. salt
2 Tbsp. butter
1 1/2 c. pecan pieces
pinch of cayenne pepper
1 tsp. baking soda

  1. Combine the sugar, corn syrup, water, salt and butter in a 3.5-qt. sauce pan over medium heat.  Bring the mixture to a simmer over medium heat and cover for 1 minute. 
  2. Remove lid and cook sugar mixture until it reaches 270°F/132°C on a candy thermometer. 
  3. Stir in the nuts and the cayenne pepper and continue to cook until the mixture reaches 295°F/146°C on a candy thermometer. 
  4. Remove the pan from the heat and stir in the baking soda (mixture will bubble vigorously). 
  5. Quickly pour the mixture onto a nonstick baking sheet and spread out to 1/4-in. thick.  Allow the candy to cool and break into pieces. 
  6. Store in airtight containers.
