Spiced Olives

Ingredient Description:
1 Tbsp. olive oil
3 garlic cloves, finely diced
1 tsp. cumin seeds
1 tsp. fennel seeds
1 tsp. coriander seeds
1/4 tsp. ground cardamom
1/4 tsp. crushed red pepper flakes
1/4 tsp. ground nutmeg
1/4 tsp. ground cinnamon
1/4 tsp. ground sumac
1/4 tsp. cayenne pepper
1 c. green olives
1 c. black olives
1 tsp. lemon zest
2 Tbsp. lemon juice
2 Tbsp. orange juice

  1. In a 10-in. omelette or fry pan, heat the olive oil, garlic and spices until aromatic, about 2 - 5 minutes.
  2. Add all the olives to the pan, stir to coat and remove from heat. Transfer the olive mixture to a bowl, add the lemon zest, lemon juice and orange juice. Stir well.
  3. Allow mixture to cool, then cover and refrigerate for at least 4 hours. Store up to 2 weeks. The flavor will improve with time.
  4. To serve, drain liquid and serve at room temperature.
