1 c. baking apples such as Macintosh or Matsu, peeled and finely chopped
2 Tbsp. raisins or currants (optional)
1 Tbsp. granulated sugar
1 tsp. all-purpose flour
1 tsp. fresh lemon juice
1/2 tsp. ground cinnamon
1/8 tsp. ground nutmeg
3 sheets phyllo dough, thawed
2 Tbsp. unsalted butter, melted
Preheat an oven to 375°F/190°C.
In a small mixing bowl combine apple, raisins, sugar, flour, lemon juice, cinnamon and nutmeg. Set aside.
Lightly brush one sheet of phyllo dough with some of the melted butter. (Keep remaining phyllo covered with a damp cloth.) Place another sheet of phyllo directly on top of the first sheet; brush with additional butter. Top with the third sheet of phyllo, brushing with butter.
Cut the stack of phyllo sheets lengthwise and crosswise once, creating four quarters. Place a quarter of the apple filling in the center of each square. To form the bundle, gather the opposite corners of each square around the mixture and pinch to secure the enclosure. Repeat with remaining phyllo to create 4 filled pastries or "beggar's purses".
Transfer to a lightly buttered jelly roll pan or cookie sheet. Brush the tops of the bundles with the remaining butter. Bake for 15 - 20 minutes or until golden. Serve warm or cool and accompany with vanilla ice cream and Brandy Vanilla Sauce. (See recipe in dessert section.)
