Herbes de Provence is a blend of herbs most commonly used in southern France. It contributes to this masterfully fine and delicious pumpkin soup. In no time at all, you'll be sitting down to savor a bowl for yourself.

Pumpkin Soup with Herbes de Provence

Ingredient Description:
3 Tbsp. olive oil
1 large Spanish onion, cut in 1/4-in. dice
1-in. piece fresh ginger root, minced
6 cloves of garlic, minced
2 Tbsp. Herbes de Provence
2 25-oz. cans plain pumpkin
48 - 64 oz. of chicken or vegetable broth (more or less liquid for preferred consistency)
1/4 c. honey

  1. Preheat an 8-qt. stock pot on medium heat for 2 - 3 minutes.  Add the oil to the pan and let it heat for an additional minute.  
  2. Add onions, ginger, garlic and Herbes de Provence to the pan and sauté until the onions are transparent. 
  3. Add the pumpkin and gradually add the broth until the desired consistency is reached.  Add the honey.  Simmer for 15 - 20 minutes and serve.
  4. Optional: Garnish with a drizzle of plain, low-fat yogurt and/or toasted sliced almonds.
