"No Bake" Ginger Orange Cheesecake Balls

Ingredient Description:
8 oz. light cream cheese, softened
9 oz goat cheese, softened
1 orange, rind and all
3 Tbsp. fresh ginger, grated
graham cracker crumbs

  1. Place all ingredients in a food processor and blend thoroughly until smooth.
  2. Use a spoon to roll out the batter into quarter-size balls.
  3. Roll each ball in graham cracker crumbs to coat.
  4. Refrigerate until firm.
  5. Serve with fresh berries if desired.
