Feta and Olive Crostini

Ingredient Description:
1 long baguette, sliced on the diagonal into 24 1/2-in. thick slices
2 Tbsp. extra-virgin olive oil
1 small red bell pepper, roasted, peeled and diced
1 small tomato, diced
1 garlic clove, minced
2 tsp. lemon juice
1 c. imported black olives, such as Niçoise or Kalamata, pitted and chopped
2 Tbsp. fresh flat-leaf parsley, chopped
1 1/2 Tbsp. fresh mint, chopped
4 oz. feta cheese

  1. Preheat the oven to 400°F/205°C.
  2. Brush both sides of the bread slices lightly with olive oil.  Place in a single layer on a baking sheet and bake, turning occasionally until golden, about 7 - 10 minutes.
  3. Top each slice of bread with 1Tbsp. of the feta mixture and serve immediately.
