Crate Tapas Baked Artichoke

Ingredient Description:
1 14-oz. can of artichoke bottoms, drained and sliced
1 large clove garlic, minced
1 Tbsp. olive oil
1 medium shallot, finely diced
3 Tbsp. dry bread crumbs
1/2 c. grated Parmesan cheese
few dashes of hot sauce
1 Tbsp. Dijon mustard
1 Tbsp. fresh parsley, chopped
2 slices of prosciutto, sliced very thin and cut into short strips
1 or 2 poached eggs (optional)
crumbled Feta cheese (optional)

  1. Preheat oven to 350°F/180°C.  Lightly butter or oil a tapas pan.
  2. Combine all ingredients (except for optional items) in a medium bowl.
  3. Put the artichoke mixture into the tapas pan.  Bake in oven for 25 - 30 minutes or until the top of the artichokes are a very light brown.
  4. Add either or both of the optional items after the artichokes have been removed from the oven.
  5. Makes one pan.  The recipe doubles easily.
