1 c. plus 3 Tbsp. unsalted butter, softened
2/3 c. plus 1 Tbsp. granulated sugar
2 egg yolks
2 1/4 tsp. heavy whipping cream
2 c. all-purpose flour
2/3 c. cocoa
1/8 tsp. salt
Preheat oven to 350°F/180°C.
Cream butter and sugar until fluffy. Mix in yolks and cream.
Add dry ingredients and mix until dough comes together.
Roll dough out to 1/4-in. thick and cut with cookie cutters or roll into a log, chill and slice off cookies.
Place on parchment-lined cookie sheet and chill 10 minutes. Bake in oven until cookies are just set.
