Apple-Cheese Crumble

Ingredient Description:
1/4 c. golden raisins
3/4 tsp. ground cinnamon
2 Tbsp. cold butter or margarine
4 large tart green-skinned apples such as Granny Smith, peeled, cored and sliced
1/2 c. sugar
1/2 c. all-purpose flour
1/2 c. shredded sharp cheddar cheese
vanilla frozen yogurt or ice cream (optional)

  1. Preheat oven to 350°F/180°C.
  2. Spread apples in a 7x10-in. oval au gratin pan, 8-in. square cake pan, or shallow 2-qt. casserole dish. Stir in raisins, 1/4 c. of the sugar and cinnamon; spread out evenly and set aside.
  3. In a medium bowl, stir together flour and remaining 1/4 c. sugar. Using a pastry blander or 2 knives, cut in butter and cheese until mixture resembles coarse meal. Sprinkle mixture evenly over apples.
  4. Bake in an oven until topping is golden and apples are tender when pierced, about 1 hour. Serve warm or at room temperature; top with frozen yogurt, if desired.
