Apple Spice Cake

Sprinkle with confectioners' sugar for a pretty presentation, then top with our brandy whipped cream.

Ingredients

1/2 c. shortening

3/4 c. brown sugar

3/4 c. white sugar

1 tsp. vanilla

2 eggs

1 c. cold water

2 1/2 c.s flour

1 tsp. baking powder

1 tsp. baking soda

1 tsp. salt

1 tsp. cinnamon

1/2 tsp. nutmeg

1/2 tsp. allspice

3 c.s of apples (about 4 apples) peeled and slice thin

1 c. pecans chopped

1 c. brown sugar

Directions

Method

Cream the shortening and sugar together in a mixing bowl. Stir in the vanilla, eggs and water until smooth. Combine flour, baking powder, baking soda, salt, cinnamon, nutmeg and allspice in a small mixing bowl. Add the dry ingredients to the shortening mixture. Fold in apples. Evenly divide batter between two prepared cake pans (buttered and floured). Combine the pecans and brown sugar in a small bowl. Sprinkle the nut mixture over the cake batter evenly between the 2 pans. Bake for 30 - 40 minutes or until a toothpick into the center of the cake come out clean.
