Cookware

At Calphalon we offer a full range of cookware surfaces to fit your cooking style -including nonstick, infused anodized aluminum, stainless steel and enamel cast iron - in the basics vessels you’ll need everyday, from sauce pans and stock pots, to fry pans and roasting pans. Plus other specialty items like griddles and woks for help mastering new recipes and techniques.

Traditional Nonstick Cookware

Before You Cook

  • Wash your new pan and cover in warm, sudsy water. Rinse and dry.
  • Do not season your pan before using it. To enjoy optimum performance from your Calphalon cookware, keep it scrupulously clean. Any kind of oily residue on your pan can cause foods to stick.

Cooking with Calphalon Nonstick Cookware

Heat Settings

Use a lower heat setting than you normally would. Calphalon cookware heats and cools more quickly than other cookware because it's made of heavy-gauge aluminum. It's also important to use the right heat setting for the cooking method you're using (not too high or too low).

Experiment to find the right heat settings on your stove. No two stoves work alike. Determine where the settings work best for your stove. You may want to write them down for future reference.

In general, we recommend:

  • High heat for boiling or reducing liquids only.
  • Medium to medium-high heat for sautéing, stir frying, and frying.
  • Low heat for warming food, simmering, and preparing delicate sauces.
Cooking Oils & Sprays

With nonstick cookware, the cooking surface doesn't determine the amount of fats you use to cook. You can use very little or no added oils at all. Or you can use as much butter or oil as you like. You decide, that's the beauty of nonstick.

So, use oils or fats for added crispness, color, or flavor, if you like. For a golden color and crisp texture with hash browns, pancakes, and saut é ed meats, apply a thin coating of butter or margarine. You may also wipe a thin film of olive or vegetable over the cooking surface.

Utensils

Use only plastic, coated, or wood utensils to protect your pan's nonstick finish. Calphalon offers a complete line of nylon cooking utensils developed especially for use with nonstick cookware

TIP

DO NOT use metal utensils, sharp instruments or appliances such as electric mixers to cut, chop, release or whip foods in any nonstick pan. Such use can damage the nonstick finish and void your Lifetime Warranty.

Stove Top Use

Preheating

When sautéing, stir-frying or frying, always preheat the pan at the temperature setting you'll use to cook. Preheating provides maximum control for the cooking process. The pan is properly preheated when the rim is hot-to-the-touch.

Do not preheat on high to heat the pan faster. For cooking techniques such as sautéing, stir frying, or preparing omelettes, preheat at medium to medium-high. This will make sure your food begins cooking properly as soon as you place it in the pan.

TIP: The Butter Test

Heat the pan over medium to medium-high heat. When the rim of the pan is hot-to-the-touch, rub a teaspoon of butter over the inside of the pan. When the butter begins to bubble briskly (it should not brown), it's ready for the ingredients. If the butter begins to burn and turn brown, the heat setting is too high. Carefully wipe the burned butter out of the pan with a paper towel, lower the heat and begin again.

You can use the butter test even if you don't want to use it as a cooking medium, simply wipe it out with a paper towel and use the medium of your choice, or none at all.

Heat cooking oils

Whether you are using a hard-anodized, stainless, copper or nonstick pan, it is important to heat the butter or oil to the right temperature. Add oil or butter and allow to heat a minute before adding food. Preheating brings the pan and oil or butter to the right temperature so the food surface sears immediately. It also keeps foods from sticking in hard-anodized pans.

Fats and oils work in various temperature ranges. Use the type of oil or fat called for in the recipe.

PLEASE REMEMBER

Shorter handles, higher cooking temperatures and longer cooking times can cause handles to get hot, especially Hard-Anodized products. Cool V long handles on Infused Anodized and Commercial Hard Anodized dramatically reduce heat conduction along the handle allowing for more comfortable cooking.

Oven & Broiler Use

Nonstick pans are oven safe to 450 ° F. Nonstick pans are not approved for broiler use, which will damage the nonstick surface of the pan.

PLEASE REMEMBER

Handles will become very hot in the oven or broiler. Always use a potholder or mitt to prevent burns when removing pans from the oven.

Cleaning

Nonstick surfaces

Wash with warm, sudsy water and a sponge or soft bristle brush. Please note; pans with a stainless exterior and nonstick interior can go into the dishwasher. However, hand washing is recommended.

Hand wash your cookware thoroughly inside and out after every use. Wash with warm, sudsy water and a sponge. After sautéing or frying, we recommend cleaning nonstick pans with a nylon sponge or soft bristle brush and a recommended non-abrasive cleanser (see below) to remove any food residue.

Recommended Cleaners
  • Dawn® liquid dishwashing detergent (Do NOT use automatic dishwashing detergents for hand-washing purposes.)
Recommended Cleaning Pad
  • Sponge or soft bristle brush

DO NOT USE

Abrasive cleansers or cleaning pads, oven cleaners or other caustic cleaning solutions, baking soda, automatic dishwasher detergent, liquid bleach, liquid household cleaners used for floors, porcelain, etc.

Always allow your pan to cool before washing. Submerging a hot pan in water can cause irreparable warping.

TIP

If eggs and other foods begin sticking, even after following preheating and butter test instructions, it's a sure sign that grease and food residue have built up on the cooking surface. Clean thoroughly, referring to the recommended cleansers.

Lifetime Warranty

Calphalon Commercial Nonstick cookware, Contemporary Nonstick cookware and Commercial Nonstick Bakeware are covered by our Lifetime Warranty. And Simply Calphalon Hard Anodized Nonstick is covered by our 10-Year Warranty. Calphalon will repair or replace any item found defective in material or workmanship when put to normal household use and cared for according to instructions. Minor imperfections, surface markings as a result of shipping, and slight color variations are normal.

This excludes damage from misuse or abuse, such as improper cleaning, overheating, dishwasher use, use of caustic or other unapproved cleaners, neglect, accident, alteration, fire, theft, or use in commercial establishments.

Before Each Use

Sharpen the blade to make it easier and safer to use.

Cleaning

Carefully wipe clean with sudsy cloth and rinse after each use. Always wipe dry immediately. Do not clean in a dishwasher or allow to soak. Polish occasionally with non-abrasive metal polish to maintain shine.

Sharpening

Sharpening is done once or twice a year depending on your usage. Sharpening creates an edge on the blade and is best done by a professional. Honing steels are used to realign the blade. This is called honing your blade. To maintain your cutlery in the best possible condition, you should hone your straight edged knives before each use.

Storage

Always store in a cutlery block to preserve the cutting edges and protect hands from unnecessary contact with blade.

Cutting Boards

General Cleaning

Hand wash thoroughly with warm, soapy water after each use. Rinse and dry. Do not soak in water. Do not wash in dishwasher.

Deep Cleaning and Restoration

Every 1-2 months, cleanse the board with one capful of bleach mixed with 1 gallon of water. For stubborn stains, sprinkle the cutting board surface with salt, rub with a lemon wedge and scrub with a soft bristle brush. Rinse and dry. Apply a generous coat of mineral oil with a soft cloth. Allow the oil to soak in for approximately 6 hours. This will seal the surface, restore the shine, replenish moisture, and bring out the warm rich color of the grain.

Ceramic Bakeware

General Use and Care Instructions

  • Handle ceramic vessels with care. They will break if dropped. Avoid knocking ceramic vessels against hard surfaces. Do not tap or strike the sides of vessels with spoons or other cooking utensils.
  • Avoid stacking ceramic vessels. Place cloth or paper towels between nested items to protect them.
  • Ceramic vessels may have rough bottoms. Protect tables and other surfaces that may scratch by using a trivet or tablecloth. Always use a trivet under hot vessels.

Cooking

  • Do not expose ceramic vessels to the direct heat of any stovetop, including gas, electric and smooth top ranges.
  • Ceramic vessels are oven safe to 550°F/288°C.
  • Ceramic vessels are safe to use under the broiler.
  • Do not pre-heat empty ceramic dishes.
  • Ceramic vessels become hot in the oven and during prolonged microwave use. Always use dry oven mitts or pot holders when handling.

Freezing

  • Dishes can be taken directly from the freezer to a hot oven (max 550°F/288°C) or microwave.

Cleaning

  • Before first use, wash in warm, soapy water, rinse and dry thoroughly.
  • Always allow hot vessels to cool before placing them in water or on wet surfaces.
  • Ceramic vessels are dishwasher safe.
  • For stubborn, baked on foods, briefly soak vessels in warm water to loosen foods.
  • Clean with sponge or soft bristle brush. Do not use abrasive cleansers or pads.
  • Do not allow ceramic vessels to soak / stand in water for an extended period of time. Applying heat after soaking may cause glaze "crazing".

Utensils

  • To keep your ceramic vessels looking like new, use wooden, nylon or plastic utensils. Metal utensils and cutlery can scratch or leave gray marks in the dishes.

10 Year Warranty

Calphalon will repair or replace any item found to be defective in material or workmanship when put to normal household use and cared for according to instructions for up to 10 years after purchase. Minor imperfections, surface markings as a result of shipping, and slight color variations are normal.

Baking Tools - Rolling Mat, Rolling Pin, and Mixing Bowls

Rolling Mat: Wash in the dishwasher or by hand with warm, soapy water. Do not use abrasive cleaners. Avoid cutting or scraping on the mat. Use plastic or nylon cookie cutters only, never metal.

Rolling Pin: Wipe clean with a damp cloth. Do not use abrasive cleaners. Do not clean the rolling pin in the dishwasher.

Mixing Bowls: Safe for use with metal utensils. Mixing bowls are dishwasher safe.

Gadgets

For best results, wash with soft sponge in warm, sudsy water after each use. Dishwasher safe. Do not use abrasive cleansers. This applies to all gadgets except the 3-way meat tenderizer. The meat tenderizer must be hand-washed.

Kitchen Accessories (Pantryware, pot racks, and other accessories for your kitchen)

For occasional cleaning, use warm water, dishwashing soap, and a sponge or soft bristle brush. For stainless steel products, touch up with Bar Keeper's Friend® cleanser. For hard anodized aluminum products, touch up with Dormond.

Maintain finish and/or remove discoloration with Bar Keeper's Friend® cleanser and a soft sponge. The harsh cleaning agents in dishwasher detergent can discolor your barware. Should this occur, your barware may be polished using as Bar Keeper's Friend® cleanser.

*The Calphalon Ice Bucket is NOT dishwasher safe. DO NOT USE abrasive cleansers or cleaning pads, oven cleaners or other caustic cleaning solutions, baking soda, bleach, liquid household cleaners used for floors, porcelain, etc. These cleaners will damage the stainless surface and void the warranty.

Cleaning (terry kitchen towels, terry dish cloths, and flat kitchen towels)

Always wash kitchen towels and dish clothes before first use. This will remove any excess dyes and natural oils that can hinder the absorbency of the product. Machine wash, cold, with like colors. Tumble dry, low. Do not bleach. Do not use fabric softeners, as they leave behind a chemical residue that will inhibit absorbency.

Cleaning (pot holders & thumb mitts)

Machine wash, cold with like colors. Tumble dry, low. For best results, remove immediately from the dryer. Do not bleach.

Terry Kitchen Towels

Great for drying anything: from plates and platters to pots and pans. While the solid kitchen towel is of all over terry loop construction, the coordinate towel offers an alternative ribbed option. The terry loops on both sides of the towels allow for thousands of twisted, cotton surfaces to capture and absorb water. The towels are oversized in design to give the most effective ease in handling: a dinner plate will fit just as comfortably, as a large stock pot. The hang loop located on the back of the towel is for easy storage and drying. Multiple towels are used in the kitchen, some for drying dishes and cookware, while others are used as hand towels.

Terry Dish Cloths

Smaller in size than the kitchen towel, this item is used for washing the dishes. The unique ribbed weave of the terry loops offers a durable construction to withstand rigorous scrubbing and scouring. Multiple dish cloths are used in the kitchen, some for washing the dishes and while others are used to clean up messy drops or spills.

Flat Kitchen Towels
