Whipped potatoes are delicious with the addition of some fresh chopped herbs like parsley.

8 medium baking potatoes, peeled and cut into large dice
1 1/4 c. crème fraiche
3 - 4 Tbsp. butter
milk, as needed
salt and freshly ground pepper

Place potatoes into a nonstick 8-qt. stock pot. Cover the potatoes with water and bring to a boil. Cook for 15 - 20 minutes or until the potatoes are very soft.
Drain potatoes in a colander. Place the potatoes in a large mixing bowl. Add crème fraiche and butter and mash by hand. Season to taste with salt and pepper.
