Tzatziki (Yogurt Sauce)

Fantastic and it's fat-free!  Substitue dill for mint and add a squeeze of lemon for a summer twist.

3 - 4 garlic cloves, peeled

1/2 tsp. sea salt

1 1/2 cups plain, low-fat yogurt

1 small cucumber, 5 - 6 in. long, peeled, seeded and finely chopped

1 Tbsp. fresh mint, chiffonade

1 Tbsp. red wine vinegar

freshly ground pepper


Crush the garlic cloves using a garlic press.  Sprinkle the crushed garlic with the salt then transfer it to a bowl. 

Add the yogurt, chopped cucumber, mint and wine vinegar.  Stir until ingredients are well blended.  Add pepper to taste.
