Tomato Salad with Arugula and Sage

Make this salad even more colorful and delicious with a wide assortment of heirloom tomatoes.  You can also garnish with chopped fresh basil or cilantro.

Ingredients

3 - 3 1/2 lbs. firm, ripe tomatoes
8 oz. red cherry tomatoes
8 oz. yellow cherry tomatoes
4 oz. arugula or watercress, washed and trimmed
2 Tbsp. fresh sage, minced
2 Tbsp. extra-virgin olive oil
1/3 c. balsamic or sherry vinegar
fresh sage sprigs for garnish

Directions

Arrange the arugula on a platter.  Slice the large tomatoes crosswise and place on top of the arugula. Arrange the cherry tomatoes over the sliced tomatoes and sprinkle with the minced sage.
 
In a small bowl, mix together the oil and vinegar. Pour over the tomatoes and garnish with sage sprigs.
