Peel the orange with a vegetable peeler making sure that you leave all the white behind on the orange. Juice the orange and put the juice in a medium saucepan.
Place the orange peel, wine, honey, vanilla bean and ginger root in the saucepan with the juice and bring to a boil. Reduce the heat to low and simmer for 5 minutes. Remove from the heat. Remove the peel, bean and ginger and discard. Let the liquid cool for 1/2 hour.
In the meantime, use a melon baller and shape melon balls and place them in a large glass bowl. Pour the wine syrup over the melon balls and chill for at least 1 hour.
Serve in small bowls. Garnish with fresh mint.
