For the marinade:
In a large bowl combine lime juice, vinegar, garlic, honey, coriander and cumin.
Cut the tenderloins lengthwise into 1/8-in. strips and add to the marinade. Let stand for 10 minutes.
For preparing the fajitas:
Drain turkey and discard marinade. Preheat a 10-in. nonstick omelette or fry pan over medium heat until the rim of the pan is hot to the touch.
Add 1 Tbsp. oil to the pan and allow to heat for a minute. Add the pepper and onion and sauté until the onions begins to brown. Remove from the pan and reserve.
Add another Tbsp. of oil and heat for a moment. Add the turkey and sauté until completely cooked, about 4 minutes. Transfer the turkey to the container with the vegetables.
Wrap the tortillas in foil and warm them in a 300°F/150°C oven for about 5 minutes.
Divide the turkey and vegetables among the warm tortillas. Season with lime, top with sour cream and salsa.
