Stewed Fruits

As Spring and Summer wane, so do fresh, sweet and juicy fruits.  Drying fruits actually intensifies their natural flavor.  And stewing dried fruits lets you enjoy them in another way.  Laced with cinnamon, cloves and vanilla, enjoy stewed fruits over pound cake, yogurt or breakfast oatmeal.

Ingredients

1 1/2 c. white grape juice

1 c. dried apricots

1 c. dried split figs

1 cinnamon stick

5 whole cloves

1/4 vanilla bean

1 tsp. orange zest

3 1/2 oz. dried cherries

2 pears, peeled, cored, sliced thin

1 pound cake

1 c. plain or vanilla yogurt for garnish

Directions

Pour white grape juice into a 3.5-qt. sauce pan.  Add apricots, figs, cinnamon, cloves, vanilla bean and orange zest.  Simmer for 15 minutes. 

Add cherries and pears.  Simmer an additional 15 minutes.  Remove vanilla bean, cloves and cinnamon stick.

Serve warm fruit over pound cake.  If serving without pound cake, double recipe, extending the cooking time only 5 minutes during each cooking period.
