Stewed Fruits

As Spring and Summer wane, so do fresh, sweet and juicy fruits. Drying fruits actually intensifies their natural flavor. And stewing dried fruits lets you enjoy them in another way. Spoon stewed fruits over pound cake, yogurt or breakfast oatmeal. It's laced with cinnamon, cloves and vanilla, simmered in white grape juice. Before Spring and Summer fruits return, you can enjoy the satisfying flavors of stewed fruits.

Ingredients

1-1/2 cups white grape juice
1 cup dried apricots
1 cup dried split figs
1 cinnamon stick
5 whole cloves
1/4 vanilla bean
1 tsp. orange zest
3-1/2 ozs. dried cherries
2 pears, peeled, cored, sliced thin
1 pound cake
1 cup plain or vanilla yogurt for garnish

Directions

Pour white grape juice into a 3-1/2 qt. sauce pan. Add apricots, figs, cinnamon, cloves, vanilla bean and orange zest. Simmer for 15 minutes. Add cherries and pears. Simmer an additional 15 minutes. Remove vanilla bean, cloves and cinnamon stick. Serve warm fruit over pound cake.

If serving without pound cake, double recipe, extending the cooking time only 5 minutes during each cooking period.
