Pinch cayenne pepper
1 c. toasted pecan pieces
1 c. sugar
¼ c. water
1 medium sized baking pan lined with parchment paper
In a medium saucepan, place the sugar and water to melt over medium/high heat. Bring to a boil and allow to cook until the sugar turns a rich amber color
Remove the pan from the heat and quickly fold the cayenne and nuts into the caramelized sugar. Be careful not to get any sugar on your hands as it will burn. Turn the mixture out onto parchment lined baking sheet and allow to cool and crisp up, about 20 minutes.
Break or cut brittle into bite sized pieces.
