In a 10-in. omelette or fry pan, heat the olive oil, garlic and spices until aromatic, about 2 - 5 minutes.
Add all the olives to the pan, stir to coat and remove from heat. Transfer the olive mixture to a bowl, add the lemon zest, lemon juice and orange juice. Stir well.
Allow mixture to cool, then cover and refrigerate for at least 4 hours. Store up to 2 weeks. The flavor will improve with time.
To serve, drain liquid and serve at room temperature.
