Slow Cooker Corned Beef and Cabbage

Serve this traditional Irish dinner for St. Patrick's Day, and be sure to save the leftovers for delicious, next-day sandwiches.

1 small yellow onion, cut into wedges
3 cloves garlic, crushed
3 lbs. corned beef brisket with spice packet
3 c. water
8 oz. dark beer or ale
4 small carrots, peeled 
3 medium red potatoes, cut into wedges
1 small head of green cabbage, cut into wedges


​Add onion and garlic to the bottom of a Calphalon 7-Qt. Digital Slow Cooker. Place brisket on top of onion and garlic, then add water, beer or ale, and corned beef spice packet. Depending on size of brisket, you may need to add additional water to cover brisket. Set crock pot to cook on low setting, cover, and cook for 8 hours.

After 4 hours of cooking time, add cabbage, carrots and potatoes. Re-cover and continue cooking.

Serve with spicy mustard and horseradish (optional).
