Simple, Tangy Mustard Sauce for Vegetable Sides (Asparagus)

Delicious with almost any vegetable and easy enough for any night of the week.

2 Tbsp. butter
2 shallots, trimmed, peeled and minced
2 cloves fresh garlic, minced
1/2 c. chicken stock
2 Tbsp. Dijon-style mustard
1/2 c. sour cream
freshly ground black pepper to taste


Preheat a 1.5-qt. sauce pan on medium heat.
Add the butter and melt. Sauté the shallots until translucent.
Whisk in chicken stock and bring to a gentle simmer.
Add the mustard, sour cream and pepper. Simmer for three more minutes.
