The texture of this recipe is best if the peaches are peeled. In order to peel the peaches easily, follow these instructions. Place the water, 1/2 cup of sugar and the honey into a 2.5-qt. sauce pan. Bring this liquid to a boil.
Make cross cuts on the bottom (opposite the stem) of each peach. Place the peaches into the boiling sugar water for 2 minutes.
Remove peaches from the sugar water and allow to cool, then peel beginning from the cuts made on the bottom of the peach. Discard the sugar water.
Cut each peach in half. Remove the pit and cut into medium slices.
Place a nonstick 10-in. fry pan on medium heat. Melt the butter in the pan.
Add the sliced peaches and ginger and sauté for 1 minute. Add the berries and 2 Tbsp. sugar. Toss and sauté until the sugar is melted.
