In a medium bowl, combine the pork, fat, garlic, salt, pepper, sage, thyme and cayenne pepper. Mix the ingredients and chill for at least one hour.
Divide the mixture into 4 equal portions. Form into balls and then flatten into patties.
Heat a nonstick 10-in. fry pan on medium heat until the rim of the pan is hot to the touch. Add the oil and allow to heat an additional minute.
Add the patties and sauté for four minutes on each side or until golden brown. Drain on paper towel and serve.
