Rhubarb Crisp

So, is rhubarb a vegetable or a fruit? It's a vegetable with a unique fruit-like taste and mostly, we have assoiciated it with pies and desserts. Rhubarb is rich in vitamin C and dietary fiber, and originally, it was only cultivated for its healing properties. Not until the 18th century was it grown for culinary purposes in America and Great Britain. We use the plant's beautiful red stalks  (petioles) for cooking.

Ingredients

Fruit Filling
8 cups rhubarb cut into 1/2-in. pcs.
1-1/2 cups sugar
1/2 cup flour
3 Tbsp. butter cut into bits
2 Tbsp. orange zest
2 tsp. cinnamon
Butter for pan

Topping
3/4 cup flour
1/2 cup sugar
1/2 cup “old fashioned” rolled oats
1/2 cup sliced almonds
1/2 cup wheat germ
2 tsp. ground cinnamon
4 Tbsp. butter

Directions

Combine Fruit Filling ingredients in a large bowl. Place this rhubarb mixture in a buttered enamel cast rectangular baker.

Combine Topping ingredients in a large bowl. Make sure the butter is evenly distributed. Spread evenly on top of the rhubarb mixture. 

Bake in a preheated oven at 375°F for 45 minutes to 1 hr.

Optional: Delicious with vanilla ice cream.
