Prosciutto Rolls with Goat Cheese, Arugula and Cantaloupe

This elegant and refreshing appetizer is great to make ahead of time with only a few ingredients.

1 cantaloupe or honeydew melon, peeled, seeds removed and cut into 12 wedges
24 paper-thin slices of Prosciutto
12 arugula leaves, rinsed and dried
12 pieces goat cheese (1 oz. each)


Arrange 2 slices of Prosciutto overlapping lengthways on a cutting board. At one end of the Prosciuitto, place an arugula leaf, a slice of cantaloupe and a piece of goat cheese. Arrange the ingredients so that they do not extend beyond the upper or lower edges of the Prosciutto. Roll the layered ingredients within the Prosciutto. Take care not to tear the Prosciuitto or wrap the ingredients too loosely.
Place each roll onto a plate, wrap with plastic wrap, and refrigerate for at least 30 minutes till firm.
When ready to serve, remove rolls from refrigerator. Slice each piece into 3 bite-sized pieces. Serve with balsamic vinegar.
