"No Bake" Ginger Orange Cheesecake Balls

This is a light, tasty springtime delight! The orange rind is packed with antioxidants and flavonoids to make it incredibly healthy, too! (by Chef Nancy Waldeck)

Ingredients

8 oz. light cream cheese, softened
9 oz goat cheese, softened
1 orange, rind and all
3 Tbsp. fresh ginger, grated
graham cracker crumbs

Directions

Place all ingredients in a food processor and blend thoroughly until smooth.
Use a spoon to roll out the batter into quarter size balls.
Roll each ball in graham cracker crumbs to coat.
Refrigerate until firm.
Serve with fresh berries if desired.
