Mashed Red Skin Potatoes, Parsnips and Garlic

A comforting dish that includes the frequently forgotten parsnip.  Potato skins and garlic add a healthy bonus.

4 lbs. red skin potatoes, cut into quarters
4 - 5 parsnips, peeled and cut into quarters
7 cloves garlic
1/2 c. sour cream
1/2 c. nonfat cream cheese
1/2 c. skim milk
2 Tbsp. fresh chives, minced


Place potatoes, parsnips and garlic in an 8-qt. stock pot filled with water. Bring to a boil and cook for one hour.
Drain and place in mixing bowl.
With an electric mixer or by hand, blend and mash the potatoes, parsnips and garlic.
Add sour cream, cream cheese, skim milk and chives. Mix until smooth.
