Lime and Spring Herb Sorbet

Sorbet is sweetened water, flavored with fruit, wine or liqueur. They've been served between courses of a meal, to cleanse the palate before the main course. We've taken it a step further and made it an anytime treat, often in place of ice cream. Unlike ice cream, it is non-dairy and not whipped with air, so it is dense and flavorful. Plan ahead so that this lime sorbet is ready when you want to serve it. Just allow for the refrigeration and freezing times. This refreshing, light and inviting dessert is worth the wait, and the compliments!

Ingredients

8-10 medium limes (14 oz. fresh lime juice)
Zest of one of the limes (minced fine)

1 medium lemon
Zest of the lemon (minced fine)
Juice of the lemon

1-1/4 cup sugar
1-1/4 cup water

For Mint Sorbet
2 Tbsp. finely minced mint

For Rosemary Sorbet
4 sprigs fresh rosemary, 4 inches long

2 Tbsp. dark rum

Directions

For mint sorbet, pour the water into a medium sauce pan. Add the sugar and dissolve. Add the lime and lemon zest. Bring the mixture to a boil.

At this point, for rosemary sorbet add the rosemary sprigs to the hot syrup and let steep.

Allow the mixture to cool to room temperature and then remove the rosemary sprigs.

Add the lime and lemon juice, the minced mint and the rum.  Transfer to an airtight container and refrigerate for at least 4 hours.

Place the syrup into an ice cream maker and follow manufacturer's directions. When the sorbet has frozen (approx. 35-40 min.) transfer back to the airtight container and place in the freezer for at least 2 hours to set.
