Grilled Moroccan Lamb Chops

This recipe's marinade would be great for any red meat, including pork.  Pair with a dry red wine like Cabernet Sauvignon or Bordeaux.

Ingredients

4 Tbsp. fresh lemon juice

4 Tbsp. olive oil

1 Tbsp. serrano peppers, minced

1/4 medium red onion, diced

2 cloves fresh garlic, minced

1 tsp. coriander seeds, crushed

1 tsp. turmeric

1 tsp. fresh ginger root, minced

1 tsp. tomato paste

12 lamb chops (3 - 4 oz. each)

Directions

Combine all ingredients for the marinade in a bowl and whisk together. 

Place the chops in the bowl with the marinade and marinate, refrigerated, for about 4 hours. 

Preheat a square nonstick grill pan on medium-high heat.  Brush 1 Tbsp. olive oil over the surface of the grill pan and heat for an additional minute.. 

Place the chops in the pan and grill for approximately 1 minute per side and serve.
