Feta and Olive Crostini

Ingredients

1 long baguette, sliced on the diagonal into 24 1/2-in. thick slices

2 Tbsp. extra-virgin olive oil

1 small red bell pepper, roasted, peeled and diced

1 small tomato, diced

1 garlic clove, minced

2 tsp. lemon juice

1 c. imported black olives, such as Niçoise or Kalamata, pitted and chopped

2 Tbsp. fresh flat-leaf parsley, chopped

1 1/2 Tbsp. fresh mint, chopped

4 oz. feta cheese

Directions

Preheat the oven to 400°F/205°C.

Brush both sides of the bread slices lightly with olive oil.  Place in a single layer on a baking sheet and bake, turning occasionally until golden, about 7 - 10 minutes.

In a bowl, mix together the red pepper, tomato, garlic, lemon juice, olives, parsley and mint.  Crumble the feta on top and mix gently just until combined.

Top each slice of bread with 1Tbsp. of the feta mixture and serve immediately.
