Endive and Fennel Salad with Citrus Vinaigrette

Orange, fennel and figs lend bold flavors to this seasonal salad.

For the salad:
6 heads of Belgian endive, trimmed and ribs separated
1 fennel bulb, trimmed and thinly sliced
1 orange, peeled and segmented
6 fresh figs, sliced
For the dressing:
2 sprigs thyme, chopped
1 small shallot, minced
2 Tbsp. Champagne vinegar
2 Tbsp. orange juice
1 Tbsp. honey
6 Tbsp. olive oil
salt and freshly ground pepper


Combine all salad ingredients in a large bowl.
Combine all dressing ingredients in a medium bowl and whisk together.
Drizzle dressing over the salad mixture and serve.
