Crisp Salmon with Green Herb & Caper Sauce

Serve this main dish alongside asparagus with a light white wine like Sauvignon Blanc.

1/2 c. fresh flat-leaf parsley, chopped
3 Tbsp. fresh chives, chopped
1/2 tsp. fresh thyme, chopped
1/2 tsp. fresh oregano, chopped
1/4 tsp. fresh rosemary, chopped
3 Tbsp. capers, chopped
2 garlic cloves, minced
1/2 c. extra-virgin olive oil, divided
salt and freshly ground pepper
6  8-oz. salmon filets, skin removed
2 Tbsp. fresh lemon juice
6 lemon wedges as garnish


Combine the parsley, chives, thyme, oregano, rosemary, capers, garlic and 6 Tbsp. of olive oil in a bowl. Season to taste with salt and pepper.
Heat the remaining olive oil at high heat in a 5-qt. sauté pan. Add the salmon in a single layer and cook until golden brown and crisp on one side, about 3 minutes. Turn the salmon and cook the second side for 2 - 3 minutes more or until the salmon is golden brown.  Repeat until all filets are cooked.
Add the lemon juice to the herb mixture. Place one salmon filet on each plate and top with the herb & caper sauce and a lemon wedge.
