Crate Tapas Baked Artichoke

Created expressly for baking in a tapas pan, the artichoke's melt in your mouth goodness will leave you wanting more!

Ingredients

1 14 oz. can of artichoke bottoms, drained and sliced
1 large clove of fresh garlic, minced
1 Tbsp. olive oil
1 medium shallot, cut into fine dice
3 Tbsp. dry bread crumbs
½ c. grated parmesan cheese
A few dashes of Tabasco
1 Tbsp. Dijon mustard
1 Tbsp. fresh chopped parsley
2 slices of prosciutto (slice very thin and cut into short strips

Optional
1 or 2 poached eggs
Crumbled Feta

Directions

Preheat the oven to 350 degrees.

Lightly butter or oil a Calphalon tapas pan.

Combine all ingredients (except for optional items) in a medium bowl.  Put the artichoke mixture into the tapas pan.  Bake at 350 degrees for 25 – 30 minutes or until the top of the artichokes are a very light brown. 

Add either or both of the optional item after the artichokes have been removed from the oven.

Makes one pan.  The recipe doubles easily.
