Couscous is a grain of crushed and steamed semolina and is extremely versatile. You can add golden raisins, peas, toasted nuts, dried fruits, herbs, bits of cooked meat, diced peppers or onions. Use your own creativity to explore additional tastes.
Bring the broth to a boil in a 2 1/2 qt. sauce pan. Add the couscous, scallions and parsley.
Remove from heat. Stir and serve.
