Couscous with Scallions and Parsley

Couscous is a grain of crushed and steamed semolina.
Our recipe adds healthy, fresh greens, but its versatility can be so much more. Add-in options are included. Couscous works well with many dishes. Use your own creativity to explore additional tastes.

Ingredients

1 cup plain couscous
2 cups chicken or vegetable broth
3 scallions, cleaned and trimmed
1/4 cup parsley, finely chopped

Directions

Bring the broth to a boil in a  2-1/2 qt. sauce pan. Add the couscous, scallions and parsley. Remove from heat. Stir and serve.

Couscous is extremely versatile. You can add golden raisins, peas, toasted nuts, dried fruits, herbs, bits of cooked meat, diced peppers or onions.  It can be served as an entrée or side dish.
