Chocolate Chip Cookie & Ice Cream Tapas

Another tapas pan treat that's nothing but sweet!  Chocolaty through and through and tailored to your taste by topping with your favorite ice cream!

2 1/4 c. all-purpose flour

2 1/2 tsp. baking powder

1/2 tsp. salt

1 3/4 c. brown sugar, tightly packed

3/4 c. (1 1/2 sticks) butter or margarine, room temperature

3 large eggs

1 tsp. vanilla

2/3 c. dark chocolate chips

2/3 c. semi-sweet chocolate chips

1/3 c. white chocolate chips

1/2 c. butterscotch chips

1 pint of your favorite ice cream


Preheat oven to 350°F/180°C.

Combine the flour, baking powder and salt in a medium bowl and reserve.

Cream the butter and brown sugar together with an electric mixer in a large bowl fitted with a paddle.  

Gradually add the flour mixture.  Add the eggs one at a time while mixing.  Add the vanilla and finally the chips.

Divide the dough into 4 equal parts. 

For a single tapas cookie: 

Butter a tapas pan.  Press one of the dough balls into the bottom of the tapas.  Place in the oven and bake for 30 - 35 minutes.  The cookie is done when a wooden pick stuck into the center comes out clean.  

Remove from the oven and allow to cool on a rack for 10 minutes.   

Top with ice cream and serve.

You can make 4 cookies from this recipe.  If you want to bake just one, wrap the remaining dough balls individually in plastic wrap and then in freezer bags.  When ready to use, thaw in the refrigerator and follow above directions for baking.
