Chermoula (Moroccan Green Sauce)

If you do not have a food processor, finely chop the garlic and use a blender to incorporate the other ingredients.

3 garlic cloves
1/2 tsp. salt
1/4 c. parsley, chopped
3/4 c. cilantro, chopped
1 tsp. paprika
1/2 tsp. cumin, ground
pinch cayenne pepper
1/4 c. lemon juice
1/4 c. olive oil


In a food processor, combine the garlic and salt and process to a paste.
Add the parsley and cilantro leaves and pulse 3 times quickly.
Add the spices, lemon juice and olive oil and pulse until blended.
