Buttermilk Oatmeal Pancakes

Drizzle warm Banana Walnut Sauce or spoon your favorite fruit and top with whipped cream to serve these light pancakes.

Ingredients

1 1/4 c. buttermilk

2 Tbsp. vegetable oil

1 egg

3/4 c. flour

1 c. rolled oats

2 Tbsp. brown sugar

1 1/2 tsp. baking powder

1/2 tsp. baking soda

1/2 tsp. salt

Directions

Place pancake ingredients in blender jar in order listed, starting with liquid ingredients.  Place lid on blender and press power button.  Press "Blend" and process for 15 seconds. 

Remove lid and scrape down sides of jar.  Process on "Blend" for 15 seconds more or until batter is smooth.

Preheat a greased, nonstick griddle or skillet over medium heat.  Spoon 1/4 c. batter per pancake onto pan.  When bubbles form on top of pancakes and edges set, turn and brown on other side for about 2 minutes or until golden brown. 

Remove and keep warm for serving.  Serve with Banana Walnut Sauce or desired topping.  Makes approximately 8 – 10 standard size pancakes.
