Buttermilk Oatmeal Pancakes

Ingredients

1 /14 cup buttermilk
2 tablespoons vegetable oil
1 egg
3/4 cup flour
1 cup rolled oats
2 tablespoons brown sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt​

Directions

Place pancake ingredients in blender jar in order listed, starting with liquid ingredients. Place lid on blender and press power button. Press "Blend" and process for 15 seconds. Remove lid and scrape down sides of jar. Process on "Blend" for 15 seconds more or until batter is smooth.

Spoon 1/4 cup batter per pancake onto lightly greased nonstick griddle or skillet over medium heat. When bubbles form on top of pancakes and edges set, turn and brown on other side for about two minutes or until golden brown. Remove and keep warm for serving. Serve with Banana Walnut Sauce or desired topping.
